The brand started in 2000 in Scottsdale, Arizona, originally as a spinoff from P.F. Chang’s China Bistro, designed to offer a quicker, more flexible dining experience. Over the years, Pei Wei built a reputation for fresh, customizable meals and expanded rapidly, reaching 100 locations by 2006 and operating in major markets like Texas, Arizona, California, and Florida by the early 2010s.

In 2012, Pei Wei became part of Centerbridge Partners, which helped fuel further innovation and growth. The brand was an early adopter of digital ordering and loyalty programs, and in 2017, it separated from P.F. Chang’s, moving its headquarters to Irving, Texas. The following year, Pei Wei rebranded as Pei Wei Asian Kitchen, updating its menu and visual identity to reflect a more modern approach.

As of November 2025, Pei Wei operates about 119 locations across the United States, with a focus on urban and suburban areas. The company is owned by PWD Acquisition LLC, which acquired the brand in 2019. Pei Wei continues to grow selectively, prioritizing high-traffic retail corridors and adapting its formats to include dine-in, takeout, and delivery. Its emphasis on digital convenience and menu innovation has helped it stay relevant in a competitive segment, making it a recognizable and adaptable tenant for shopping centers and mixed-use developments.
