Eddie V's Prime Seafood is described as a "stylish and vibrant dining destination" who serves up fresh seafood every day of the week paired with a nightly live jazz trio. Founded in 2000 by Guy Villavaso and Larry Foles and obtained by Darden Restaurants, Inc. in 2011, Eddie V's has since grown to include eighteen locations throughout the United States and $107 million annual sales with plans for another 75-100 potential locations. John Martin of Darden is the current president of the brand.
Clientele mostly includes "affluent adults age 30+ encompassing Millennials, Gen X and Boomers," looking to dine for both social and professional/business occasions.
Eddie V's, like all of Darden's brands, participates in charitable causes, namely, food donation. Each day, unused/unserved surplus food is prepared, packaged and donated to charitable organizations, food banks and shelters in their communities. Since it's start in 2012, the restaurant has donated 125,000 pounds of food.
