Einstein Bros Bagels is a coffee and bagel chain in the United States. Einstein Bros was created by the chain restaurant corporation, Boston Chicken way back in 1955 in order to market breakfast foods. It is owned by Einstein and Noah Corp., a wholly owned subsidiary of Einstein Noah Restaurant Group, Inc. In 2014, Einstein Noah Restaurant Group was acquired by JAB Holding Company and BDT Capital Partners.

In March 1955, Boston Chicken Inc, originally formed the Einstein and Noah Bagel Corporation as Progressive Bagel Concepts, Incorporated (PBCI). It then purchased three retail bagel chains in the United States, all of which were located in regions that did not have longstanding bagel traditions. These companies included Offerdahl's Bagel Gourmet, Incorporated (Fort Lauderdale), Bagel & Bagel, Incorporated (Kansas City) and Brackman Brothers, Incorporated (Salt Lake City). These stores followed a unique strategy. All the stores sold both original and new bagel flavours in the affluent neighborhoods where the customers had very little exposure to bagels previously.

Noah's Bagels was founded by Noah Alper on College Avenue in Berkeley, California. The chain of 38 stores was sold to Einstein Bros. for $100 million in 1996. In the early 1990s New World Coffee was founded by Ramin Kamfar. He was an investment banker who left his finance career to open up a coffee shop. In 1998 it bought Manhattan Bagel out of bankruptcy. The combined company purchased Washington, D.C- Based Chesapeake Bagel Bakery in 1999 when that chain had 89 stores. It gave Manhattan approximately 350 locations.
